Hearty Autumn Vegetable Stew..........
Serves 2-3 but you can double recipe
6 New Potatoes, Quartered
1/2 bag baby carrots
1 onion, cut into chunks
1 can vegetable broth
1 can diced tomatoes w/ Italian Seasoning
2 Tablespoons chopped garlic
Salt to taste
**Corn Tenders, Optional
Toss all together, except Corn in crock pot & cook on low for
about 8 hours. This stew is actually best the next day!
If you add the Corn, add them during the last 10 minutes of cooking.
